Thirty to forty percent of the food produced in the US is wasted – produced but not consumed. This represents a tremendous source of carbon emissions and water contamination with no benefit. This waste is spread across the production system, but 43% of it happens at the household level.

Matching consumption to production, reducing waste, would achieve an instant and significant reduction in GHG emissions and nitrate water pollution. It would also decrease the amount of chemicals, fertilizer, and energy associated with farming. This change begins with education at the household, but also depends on legal changes that raise the cost of waste for producers and retailers.
